The restaurant that replaced Union downtown: Japonessa Sushi Cocina. The head chef: Billy Beach, formerly of Umi Sake House and Kushibar (the owner also runs iSushi, a conveyor-belt place in Issaquah). Japonessa Sushi Cocina's concept: "Sushi, Bar, & Lounge with a latin twist that'll move you." The place looks stylish (black chandeliers, taupe-and-platinum striped walls), the fusion isn't too obtrusive (though cilantro-haters, beware), and the happy hour is a good deal for decent sushi, izakaya snacks, and drinks (and it runs pretty much all day/night long).
